One of our household favorite breakfast foods is Breakfast Cookies. Now these take on a different recipe a lot of the time but they are all related and my kids happily gobble them up. Since being homebound I tend to have a little more time to devote to breakfast these days, so I have been trying to get creative. These breakfast thumbprint cookies were a huge success and I will definitely be making them again. They were super easy, and packed with some superfoods and plant-based protein items like Flax seeds and Chia seeds. These guys are super easy to add to most breakfast items. Here is the recipe. 2 cups GF rolled oats
2 ripe bananas, smashed
1 tbsp chia seeds
1 egg or flax egg
1 tsp vanilla extract
1 tsp cinnamon
A pinch of sea salt
2 tbsp coconut oil melted
1 tbsp raw honey
9 tsp strawberry jam
Peanut butter (or nut butter of choice) for drizzle

Preheat oven to 350
Combine all ingredients in a large bowl, mix to combine
Scoop 9 small mounds onto prepared baking sheet.
Using your thump press in the center of each mound, and place a tsp of jam in the center
Bake for 11-14 min
Let cool slightly and drizzle with peanut butter. Enjoy!
