If you follow my personal IG account it's so secret that I have a small obsession with my sourdough starter, fondly named Twyla. I have been experimenting with making sourdough soft pretzels, banana bread, and most recently bagels. This my be my most favorite experiment to date.
These bagels were soft, chewy, true New York style. AND they have the benefits of the fermentation of Sourdough. What could be better? I used this recipe from Baked the Blog. I used Coconut sugar in the boiling mixture and maple syrup in the dough... What made this extra fun (since WARNING there are A LOT of steps) is that I involved my girls with the process. We shaped our bagels together after watching a few video tutorials, they helped measure ingredients, it was really fun.
